Shad Roe Aux Fines Herbes

Ingredients
  Butter 1⁄4 Cup (4 tbs)
  Shad roe 2 Medium
  Lemon juice 2 Teaspoon
  Chopped parsley 1 Tablespoon
  Chopped chives 2 Teaspoon
  Chopped tarragon 1 Teaspoon, chopped freshly
  Chopped chervil 1 Teaspoon, chopped freshly
  Salt To Taste
  Pepper To Taste
Directions

1. In a large, heavy skillet heat the butter and add the shad roe. Sprinkle with salt and pepper. Cook the roe on both sides, turning once carefully, about twelve minutes. When the roe is lightly browned and cooked through, transfer to a hot platter.
2. Add the remaining ingredients to the skillet. Heat, stirring, and pour over the shad roe.
