Baked fish with tomatoes and onions
Ingredients
  Mackerel fillets/Orange roughy, cod, walleye, pollock / any mild fish 3 Pound, cut into pieces (4 fresh)
  Onion 2 Large, cut in big pieces
  Scallions 1 Bunch (100 gm), chopped
  Canned diced tomatoes 1 Pound
  Olive oil 2 Tablespoon
  Ground thyme 1 Teaspoon
  Ground black pepper 1⁄2 Teaspoon
  Sea salt 1 Teaspoon
  Bay leaves 8
  White wine 1⁄2 Cup (8 tbs)
  Lemon 1 , sliced razor thin brushed with olive oil
Directions

Cut fillets in a few pieces.Put all the ingredients in a 9 x 13 Pyrex dish except the lemon slices. Bake covered with foil at 400F for 45 min, then remove foil arrange the lemon slices on top and broil for about 15 minutes,until lemons turn golden brown. Keep an eye while broiling some broilers are really hot and you can burn the dish quickly. Remove from oven and let it rest for 15 minutes. You can serve it with rice or mashed potatoes, the traditional recipe is served with crusty white bread. Enjoy.

I believe this fish recipe is a mixture of Bulgarian, Greek and Turkish cuisines. During the 1300 plus years of Bulgarian existence many wars,Ottoman occupation and Byzantine shenanigans, traditions and cuisines have inter mixed to some wonderful and exotic flavors creating a great palette of Bulgarian eats.
