Sweet And Sour Poached Fish
|Orange juice||1 Cup (16 tbs)|
|Ground ginger||1⁄2 Teaspoon|
|Grated orange peel||1 Teaspoon|
|Flounder fillets||2 Pound|
|Molasses||1⁄4 Cup (4 tbs)|
|Cornstarch||1 1⁄2 Tablespoon|
|Soy sauce||2 Tablespoon|
|Lemon slices||5 (For Garnish)|
|Small green onions/Sliced cucumber||6 (For Garnish)|
|Lemon juice||3 Tablespoon|
Combine orange juice, orange peel and ginger.
Reserve 1/4 of mixture; pour remainder into large skillet.
Blend together molasses, soy sauce, lemon juice and ginger.
Add to skillet.
Bring combined mixtures to boil.
Add fillets; reduce heat until mixture is simmering.
Cover and cook 10 minutes.
Carefully remove fillets to serving platter; keep warm.
Prepare sauce by combining cornstarch with reserved orange mixture.
Quickly stir this into skillet and cook, stirring constantly until slightly thickened.
Garnish fish with lemon slices, small green onions or sliced cucumber.
