|Cottage cheese||1 Cup (16 tbs)|
|Grated lemon rind||1 Teaspoon|
|Mozzarella cheese||1 Cup (16 tbs), cut fine|
|Hot pepper sauce||6 Drop|
|Egg||1 , slightly beaten|
|Finely chopped chives/Finely chopped parsley||1⁄4 Cup (4 tbs)|
Combine all ingredients; taste for seasoning.
Place one spoonful atop 4 inch square pizza dough, then fold and seal to make pidoni ready to let dough rise to double in bulk before baking (see pidoni recipe).
