  Cottage cheese 1 Cup (16 tbs)
  Grated lemon rind 1 Teaspoon
  Mozzarella cheese 1 Cup (16 tbs), cut fine
  Hot pepper sauce 6 Drop
  Egg 1 , slightly beaten
  Finely chopped chives/Finely chopped parsley 1⁄4 Cup (4 tbs)

Combine all ingredients; taste for seasoning.
Place one spoonful atop 4 inch square pizza dough, then fold and seal to make pidoni ready to let dough rise to double in bulk before baking (see pidoni recipe).
