Honey Apricot Filling
|Dried apricots||1 Pound (500 gram)|
|Water||250 Milliliter (1 cup)|
|Grated orange rind||2 Teaspoon|
|Orange juice||50 Milliliter (1/4 cup)|
|Finely chopped walnuts||125 Milliliter (1/2 cup)|
|Clover honey||150 Milliliter (2/3 cup)|
In medium saucepan, combine apricots and water; cover and simmer gently until apricots are tender, 20 to 30 minutes.
Drain, if necessary, let cool and chop finely.
In bowl, combine chopped apricots, orange rind, orange juice, walnuts and honey; mix well. (Filling can be made ahead, covered and stored in refrigerator for up to 4 days.)
