Chunky Chicken Filling
|Water||2⁄3 Cup (10.67 tbs)|
|Bulgur wheat||1⁄3 Cup (5.33 tbs)|
|Chopped cooked chicken||1⁄2 Cup (8 tbs)|
|Chopped jicama||1⁄4 Cup (4 tbs)|
|Finely chopped green pepper||1⁄4 Cup (4 tbs)|
|Orange yogurt||1⁄4 Cup (4 tbs)|
|Mayonnaise/Salad dressing||1⁄4 Cup (4 tbs)|
|Curry powder||1⁄2 Teaspoon|
|Dry mustard||1⁄2 Teaspoon|
In a saucepan combine the water and bulgur wheat.
Bring to boiling; reduce heat.
Simmer, covered, for 15 minutes.
Drain well, pressing out excess liquid.
Combine bulgur, chicken, jicama, and green pepper.
Combine the yogurt, mayonnaise or salad dressing, chutney, curry powder, dry mustard, and salt; stir into the bulgur mixture.
Cover and chill.
