The lemon filling is a cooked filling prepared by thickening lemon juice, egg, sugar and cornstarch mixture in a broiler. Flavored with additional lemon peel, the lemon filling goes well with plain cakes or white cakes.
|Sugar||3⁄4 Cup (12 tbs)|
|Slightly beaten egg yolk||1|
|Water||3⁄4 Cup (12 tbs)|
|Lemon juice||3 Tablespoon|
|Grated lemon peel||1 Teaspoon|
Mix sugar, cornstarch, and salt; add egg yolk, water, and lemon juice; cook in double boiler till thick, stirring occasionally.
Remove from heat and add lemon peel and butter.
