|Soy sauce||2 Tablespoon|
|Scallions||3 , chopped|
|Bean sprouts||1 1⁄2 Cup (24 tbs)|
|Diced bamboo shoots||1⁄4 Cup (4 tbs)|
Cut the chicken in strips as narrow as possible.
Mix with the cornstarch, salt, sugar, and 1 tablespoon soy sauce.
Let stand 10 minutes.
Heat 1 tablespoon oil in a skillet; saute the scallions, bean sprouts, and bamboo shoots 2 minutes.
Season with the remaining soy sauce and remove from pan.
Heat remaining oil in the skillet; saute the chicken 2 minutes.
Return vegetables and cook 2 minutes.
Chill for 30 minutes.
