|Water||1 Cup (16 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Lemons juice||2 Tablespoon|
|Egg yolks||4 , beaten|
|Lemon rind||1 Tablespoon, grated|
Combine all ingredients except egg yolks in a heavy saucepan, cook over medium heat, stirring constantly, until mixture comes to a boil.
Boil 1 minute, remove from heat.
Stir about one-fourth of hot mixture into egg yolks, add to remaining hot mixture, stirring constantly.
Return to heat and cook, stirring constantly, 1 minute.
Remove from heat, let cool.
