Almond Peach Filling
|Frozen sliced peaches||12 Ounce, thawed|
|Lemon juice||1 Teaspoon (Boiling Water)|
|Gelatin||6 Ounce (Orange Flavored)|
|Chopped almonds||1⁄2 Cup (8 tbs)|
|Almond extract||1⁄2 Teaspoon|
|Red food color||6 Drop|
|Food color||6 Drop (Yellow)|
|Whipping cream||1 Cup (16 tbs) (Chilled)|
Drain peaches, reserving syrup.
Reserve 6 peach slices; sprinkle with lemon juice and refrigerate.
Crush remaining peaches.
Measure reserved syrup and add enough boiling water to measure 2 cups.
Pour over gelatin in large bowl, stirring until gelatin is dissolved.
Stir in crushed peaches, almonds, extract and food colors.
Chill until very thick.
In chilled bowl, beat cream until stiff.
Beat gelatin mixture at high speed until thick and fluffy or about double in volume.
Fold in cream.
