Almond Peach Filling

Ingredients
  Frozen sliced peaches 12 Ounce, thawed
  Lemon juice 1 Teaspoon (Boiling Water)
  Gelatin 6 Ounce (Orange Flavored)
  Chopped almonds 1⁄2 Cup (8 tbs)
  Almond extract 1⁄2 Teaspoon
  Red food color 6 Drop
  Food color 6 Drop (Yellow)
  Whipping cream 1 Cup (16 tbs) (Chilled)
Directions

Drain peaches, reserving syrup.
Reserve 6 peach slices; sprinkle with lemon juice and refrigerate.
Crush remaining peaches.
Measure reserved syrup and add enough boiling water to measure 2 cups.
Pour over gelatin in large bowl, stirring until gelatin is dissolved.
Stir in crushed peaches, almonds, extract and food colors.
Chill until very thick.
In chilled bowl, beat cream until stiff.
Beat gelatin mixture at high speed until thick and fluffy or about double in volume.
Fold in cream.
