Wash spinach under cold running water.
Place in a microwave-safe dish.
Microwave 2 to 3 minutes at HIGH, stirring after 2 minutes.
Some spinach may take only 2 minutes to cook.
Drain well in a colander, reserving the liquid.
Add enough light cream to the reserved liquid to obtain the 3/4 cup (190 mL) of liquid required to prepare the Veloute Sauce.
Microwave 3 minutes at MEDIUM.
Season to taste.
Add the well-drained, cooked spinach.
If necessary to warm, microwave 2 minutes at MEDIUM.
Pour over the cooked omelette.
