|Sugar||3⁄4 Cup (12 tbs)|
|Water||3⁄4 Cup (12 tbs)|
|Lemon, rind||2 Tablespoon, grated|
|Lemon juice||1⁄3 Cup (5.33 tbs)|
Combine sugar, cornstarch and salt thoroughly in saucepan.
Stir in water gradually.
Bring to a boil quickly, stirring constantly.
Turn down heat and boil gently 1 minute, stirring constantly.
Remove from heat.
Stir in butter and lemon rind.
Stir in lemon juice gradually.
Return to heat and bring back to the boiling point (Mixture will be quite thick.)
Cool, stirring occasionally.
Use to fill spice roll as directed in recipe.
