Gherkin And Sardine Filling
|Sardines||4 , skinned and boned|
|Hard boiled egg yolk||2|
|Mixed mustard||1 Teaspoon (Leveled)|
|Finely chopped gherkins||2 Tablespoon|
1 In a bowl, add the prepared sardines, egg yolks, mustard, mayonnaise and seasonings.
2 Pound the mixture together.
3 Through a fine sieve, rub the mixture
4 In a bowl, cream the butter.
5 Combine with the sieved mixture.
6 Correct the seasoning.
7 Spread the thinly cut slices of white bread with the mixture.
8 Sprinkle the chopped gherkins over this and cover with thin slices of brown bread and butter.
9 Press well, trimming if necessary, cut as required.
10 Use as desired.
