Date Filled Cookies

Ingredients
  Butter 1⁄2 Cup (8 tbs)
  Brown sugar 2 Cup (32 tbs)
  Eggs 2
  Vanilla 1 Teaspoon
  All purpose flour 3 1⁄2 Cup (56 tbs)
  Salt 1⁄2 Teaspoon
  Baking soda 1 Teaspoon
  Baking powder 1 Teaspoon
  Dates 1 Pound, chopped
  Brown sugar 1⁄2 Cup (8 tbs)
  Water 1⁄2 Cup (8 tbs)
  Walnuts 1⁄2 Cup (8 tbs), chopped
Directions

MAKING
1. In a mixing bowl, cream butter and sugar till fluffy, beat the eggs and vanilla into it until well blended
2. In a dry bowl, sift flour, salt and baking powder together and blend this mixture into the creamed mixture
3. Shape the dough into rolls an inch and a half in diameter, wrap them in wax paper and allow to chill for several hours
4. For the date filling, in a saucepan, mix together the dates, sugar and water and allow to boil; turn the heat down, simmer till thick, turn the heat off and cool; add walnuts to it
5. Cut the cookie dough into thin slices, place a teaspoon of filling in half of these slices and top with the rest of the slices, pressing the edge with a fork
6. Place them on a buttered cookie sheet and bake for ten minutes at 350°F

SERVING
7. Serve as appropriate
