Ginger Fruit Filling
|Icing sugar||1⁄4 Cup (4 tbs)|
|Canned pineapple||1 Cup (16 tbs)|
Mix these well in the top of a double boiler and cook, stirring constantly over hot water for about 10 mins.
Cover and cook another 10 minutes.
Remove from heat and add: 1/2 -cup mashed bananas 1/2 -cup crushed pineapple Return to heat and cook another 2 minutes, stirring gently.
Add 3 tblspns, finely chopped ginger and 1 tspn, vanilla essence.
