Ginger Fruit Filling

This ginger fruit filling is made delicious with canned pineapples and juice. Thick and soft, try its variations with your favorite fruits - they all taste incredible!
Ingredients
  Icing sugar 1⁄4 Cup (4 tbs)
  Cornflour 3 Tablespoon
  Canned pineapple 1 Cup (16 tbs)
  Salt 1 Pinch
  Juice 1 Tablespoon
Directions

Mix these well in the top of a double boiler and cook, stirring constantly over hot water for about 10 mins.
Cover and cook another 10 minutes.
Remove from heat and add: 1/2 -cup mashed bananas 1/2 -cup crushed pineapple Return to heat and cook another 2 minutes, stirring gently.
Add 3 tblspns, finely chopped ginger and 1 tspn, vanilla essence.
