Savor this delicious fruit filling with dried apricots, pineapples, coconut topped with a dash of orange flavor. Great way to fill in your rolls, pastries, buns and more!
Ingredients
  Cooked dried apricots 1 Cup (16 tbs)
  Crushed pineapple 1 Cup (16 tbs)
  Drained canned crushed pineapple 1⁄2 Cup (8 tbs)
  Grated coconut 1 Cup (16 tbs)
  Orange juice 3 Tablespoon
  Grated orange peel 1⁄2 Teaspoon
Directions

Combine the apricots, pineapple and sugar in saucepan.
Cook and stir over low heat for 5 min., or until mixture is clear.
Cool.
Add orange juice, peel and coconut.
Chill before spreading between spice cake layers.
