Cheese Strudel Filling

|Cottage cheese||1 Pound|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Egg||1 , lightly beaten|
|Egg white||1 , lightly beaten|
|Heavy cream||1⁄4 Cup (4 tbs)|
|Seedless raisins||1 Cup (16 tbs)|
|Minced walnuts||1 Cup (16 tbs)|
|Lemon||1 , finely grated for rind and juice extracted|
Puree cottage cheese in an electric blender 1-2 minutes at high speed until smooth or press through a fine sieve.
Mix with remaining ingredients and use as strudel filling.
Restriction:Lacto Ovo Vegetarian
