Cherry Strudel Filling

|Canned pitted cherries||2 Pound, drained (Tart Red / Sweet Dark, 2 Cans Of 1 Pound Each)|
|Sugar||1 Cup (16 tbs)|
|Almond extract||1⁄4 Teaspoon|
|Blanched almonds||1 Cup (16 tbs), minced|
Quarter the cherries, toss with the minimum amount of sugar, and let stand 10 minutes; taste for sweetness and add more sugar if needed.
Mix in extract and almonds and use as strudel filling.
Restriction:Lacto Ovo Vegetarian
