Cherry Strudel Filling

Ingredients
  Canned pitted cherries 2 Pound, drained (Tart Red / Sweet Dark, 2 Cans Of 1 Pound Each)
  Sugar 1 Cup (16 tbs)
  Almond extract 1⁄4 Teaspoon
  Blanched almonds 1 Cup (16 tbs), minced
Directions

Quarter the cherries, toss with the minimum amount of sugar, and let stand 10 minutes; taste for sweetness and add more sugar if needed.
Mix in extract and almonds and use as strudel filling.
