Ingredients
  Meat 1 1⁄2 Pound (Boiling Beef / Pork Tongue Can Be Used For Part Of The Meat)
  Raisins 1 Cup (16 tbs)
  Applesauce 1 Cup (16 tbs)
  Sugar 3⁄4 Cup (12 tbs)
  Dark syrup/Light molasses 1⁄2 Cup (8 tbs)
  Crushed coriander seed 1⁄2 Teaspoon
  Cloves 4 Teaspoon (Use Less For Milder Flavor)
  Salt 1 Teaspoon
  Pinnons/Shelled walnuts / almonds 4 Cup (64 tbs)
  Dry sherry/Brandy 1⁄4 Cup (4 tbs)
Directions

1 Simmer the meat in water to cover until tender. Grind or puree in an electric blender.
2 Add remaining ingredients and mix well. The filling should be thick and moist.
3 If it seems dry, add more liquid. Let it rest for several hours to blend flavors, then use for filling.
