Sour Cream Prune Cake Filling
|Eggs||2 , beaten|
|Sugar||3⁄4 Cup (12 tbs)|
|Sour cream||1⁄2 Cup (8 tbs)|
|Pitted chopped cooked prunes||1 Cup (16 tbs)|
|Grated lemon peel||1 Teaspoon|
1. Combine and mix the eggs, salt, sugar, sour cream and prunes in the upper part of an enamel or glass double boiler. Cook over boiling water 20 minutes, or until very thick, stirring constandy.
2. Remove from the heat and add the lemon peel and vanilla. Let cool thoroughly before using.
