Porcini Mushroom Filling
|Dried porcini mushrooms||1 Ounce (25 Gram)|
|Olive oil||3 Tablespoon|
|Garlic||2 Clove (10 gm), finely chopped|
|Shallot||1 , finely chopped|
|Brown mushrooms||20 Ounce, finely chopped (625 Gram)|
|Chopped flat leaf parsley||2 Tablespoon|
Soak porcini and finely chop.
Heat oil in a large frying pan.
Add garlic and shallots and cook over medium-high heat until fragrant, 1 minute.
Add mushrooms and porcini and cook, stirring frequently, until crisp, 10 minutes.
Add parsley and salt and pepper to taste.
Leave to cool completely before using to fill ravioli.
