Classic Lemon Filling
|Sugar||1⁄3 Cup (5.33 tbs)|
|Cornstarch||1 1⁄2 Tablespoon|
|Water||3⁄4 Cup (12 tbs)|
|Egg yolk||1 , beaten|
|Lemon peel||2 Teaspoon, grated|
|Lemon juice||3 Tablespoon|
In 4-cup measure or small mixing bowl, combine sugar, cornstarch and salt.
Gradually stir in water.
Microwave at High 3 to 4 minutes, or until very thick, stirring after 2 minutes, then every minute.
Mix a little hot mixture into egg yolk.
Blend into remaining sugar mixture.
Microwave at 50% (Medium) 1 minute.
Stir in butter, peel and lemon juice until smooth.
Cover; cool slightly.
