Orange Cheese Filled Pancakes

Ingredients
  Cream cheese 8 Ounce (1 Package)
  Sour cream 1⁄2 Cup (8 tbs)
  Frozen florida orange juice concentrate 2 Tablespoon, thawed
  Salt 3⁄4 Teaspoon
  Diced green pepper 1⁄4 Cup (4 tbs)
  Diced pepper red 1⁄4 Cup (4 tbs)
  Flour 2 Cup (32 tbs), sifted
  Baking powder 2 Teaspoon
  Sugar 2 Tablespoon
  Eggs 2
  Sour milk 2 Cup (32 tbs)
  Soda 1 Teaspoon
  Melted shortening 6 Tablespoon
Directions

Blend the cream cheese, sour cream, undiluted orange juice concentrate and 1/4 teaspoon salt in a bowl, then fold in green and red peppers.
Sift the flour, baking powder, remaining salt and sugar together.
Beat eggs well in a bowl.
Combine the sour milk and soda.
Add to eggs and mix well.
Stir in the shortening.
Add flour mixture and mix well.
Drop by spoonfuls onto a hot griddle to make 8 pancakes, 6 inches in diameter.
Cook until brown on both sides, turning once.
Keep warm.
Spread orange filling generously between pancakes in stacks of 4 high.
Slice stacks into quarters and serve immediately.
