Cheese Filled Blintzes
|Flour||1 Cup (16 tbs)|
|Baking powder||1⁄4 Teaspoon|
|Cream||1 Cup (16 tbs)|
|Melted butter||1 1⁄2|
|Cheese filling||1⁄2 Cup (8 tbs)|
Sift flour, salt, sugar and baking powder together.
Combine beaten egg yolks and cream; beat in flour mixture.
Fold in stiffly beaten egg whites and 1 tea spoon butter.
Brush bottom of hot 7-inch frypan with butter.
Pour in 2 tablespoons batter; tilt pan to spread batter evenly.
Cook until edges are bubbly; turn.
Cook for 2 minutes longer.
Place on waxed paper.
Repeat with remaining batter.
Spread cakes with Cheese Filling; fold cakes over filling.
Place in greased baking dish; pour any remaining Cheese Filling over cakes.
Bake at 350 degrees until heated through.
