Homemade Orange Filling
|Sugar||1 Cup (16 tbs)|
|Orange juice||3⁄4 Cup (12 tbs)|
|Water||1⁄3 Cup (5.33 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Egg yolks||3 , lightly beaten|
|Orange rind||1 Tablespoon, grated|
Combine first 3 ingredients in a small saucepan.
Combine orange juice, water, and lemon juice; gradually add orange juice mixture to sugar mixture.
Cook over medium heat, stirring constantly, until mixture comes to a boil; boil 1 minute.
Gradually stir about one-fourth of hot mixture into yolks; add to remaining hot mixture, stirring constantly.
Cook, stirring constantly, 1 minute.
Remove from heat, and stir in grated orange rind.
Cool to room temperature.
