Ingredients
  Dates 1 Pound, chopped pitted
  Water 2 1⁄2 Cup (40 tbs)
  Brown sugar 1 Cup (16 tbs) (firmly packed)
  Lemon 1 (juice and grated peel)
Directions

Combine first three ingredients; cook over low heat, stirring occasionally until jamlike in consistency.
Add lemon juice and peel and spread on cookies.
