Herb & Cheese Filling
|Pork sausage links||2|
|Onion||1⁄4 Cup (4 tbs), chopped|
|Olive oil||1 Tablespoon|
|Egg||1 , slightly beaten|
|Spinach||1⁄2 Cup (8 tbs), cooked and well-drained|
|Fine soft bread crumbs||1⁄2 Cup (8 tbs)|
|Grated parmesan cheese||2 Tablespoon|
Remove casing from sausages and break up meat.
Add onion and saute in oil.
Add egg, spinach, bread crumbs, salt, rosemary, thyme, pepper and Parmesan cheese.
Divide into 8 portions and roll each in a crepe.
Place seam-side down in a buttered baking dish.
Bake at 350° for 20-25 minutes.
