Orange Coconut Filling

  Sugar 1⁄3 Cup (5.33 tbs)
  Egg 1 Large
  Orange juice 1 Tablespoon
  Lime juice 1 1⁄2 Teaspoon
  Orange rind 1⁄2 Teaspoon, grated
  Salt 1 Pinch
  Butter 1 Tablespoon
  Flaked coconut 2 Tablespoon

1. Combine sugar, egg, orange juice, lime juice, orange rind and salt in top of double boiler; whisk until blended. Add butter.
2. Cook mixture over simmering water, stirring frequently, until very thick, 10 to 12 minutes. Stir in coconut; transfer to small bowl. Refrigerate, covered, until completely cool, about 30 minutes.
