Blue Potato Filling

Ingredients
  Potato cups 6 , cooked
  Butter 3 Tablespoon
  Blue cheese 1 Cup (16 tbs), mashed
  Cream 1 Tablespoon
  Tomato sauce/Catsup 1 Tablespoon
  Fresh basil 1⁄2 Teaspoon, chopped
Directions

MAKING
1) Make potato cups, reserve mashed potato pulp.
2) In a pan, melt the butter, stir in blue cheese, cream, tomato sauce or catsup, basil and reserved mashed potato.
3) Stir the cream mixture until well mixed.
4) Spoon the cream mixture into shells and reheat.

SERVING
5) Serve the potato cup hot garnished with chopped parsley if desired.
