Fresh Orange Filling

  Orange 1 Medium
  Water 1⁄2 Cup (8 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Cornstarch 4 Teaspoon
  Lemon juice 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Butter/Margarine 1 Tablespoon

1. From orange, grate 1 tablespoon peel and squeeze 1/4 cup juice.
2. In 1-quart saucepan, stir orange peel, orange juice, water, sugar, cornstarch, lemon juice, and salt until blended. Cook over medium heat, stirring constantly, until mixture thickens and boils; boil 1 minute.
3. Remove saucepan from heat; stir in butter or margarine. Cool filling at room temperature. (If filling becomes too thick upon standing to spread easily, stir until it reaches spreading consistency.)
