Pork Or Chicken Filling

Ingredients
  Onion 1 Medium, chopped
  Salad oil/Lard 1 1⁄2 Tablespoon
  Cooked lean pork/Cooked chicken / turkey 2 Cup (32 tbs), finely diced or shredded
  Canned jalapeno/Other pickled, very hot chili 5 Ounce, minced
  Raisins 1⁄4 Cup (4 tbs)
  Chopped ripe olives 1 1⁄2 Tablespoon
  Mexican red chile sauce/Canned enchilada sauce 2⁄3 Cup (10.67 tbs)
Directions

In a wide frying pan over medium-high heat, cook onion in oil until limp.
Stir in meat, chile, raisins, olives, and chile sauce.
Simmer, uncovered, for 10 minutes, stirring occasionally, to blend flavors.
