Pork Or Chicken Filling
|Onion||1 Medium, chopped|
|Salad oil/Lard||1 1⁄2 Tablespoon|
|Cooked lean pork/Cooked chicken / turkey||2 Cup (32 tbs), finely diced or shredded|
|Canned jalapeno/Other pickled, very hot chili||5 Ounce, minced|
|Raisins||1⁄4 Cup (4 tbs)|
|Chopped ripe olives||1 1⁄2 Tablespoon|
|Mexican red chile sauce/Canned enchilada sauce||2⁄3 Cup (10.67 tbs)|
In a wide frying pan over medium-high heat, cook onion in oil until limp.
Stir in meat, chile, raisins, olives, and chile sauce.
Simmer, uncovered, for 10 minutes, stirring occasionally, to blend flavors.
