Rolled Fish Fillets On Spinach
|Firm fish fillets||4|
|Lime||1⁄2 , juiced|
|Tender spinach leaves||1 1⁄4 Bunch (125 gm) (1 large bunch)|
|Minced onion||1 Teaspoon|
|Garlic||6 Clove (30 gm), crushed|
|Sugar/1/2 tsp honey||1⁄4 Teaspoon|
Apply a little salt to the fish and keep aside for 20 minutes.
Wash well and apply a little more salt, pepper and lime juice.
Roll each fillet and tie with a piece of string.
Wash spinach thoroughly.
Mix in a bowl with all the other ingredients except butter.
Microwave for 3 minutes.
Let it stand for a minute.
Mix in 1 tbsp of butter into the spinach and spread it in a shallow microwave serving dish, and place the rolled fillets of fish on top of the spinach.
Dot with remaining butter.
Microwave covered for 8 -10 minutes and serve immediately, with 4 medium microwaved potatoes
