Pork Fillet In Wine

Ingredients
  Pork fillet 2 Pound
  Oil 2 Tablespoon
  Butter 2 Ounce
  Onions 1⁄2 Pound, chopped
  Button mushrooms 1⁄2 Pound
  Flour 2 Tablespoon
  Beef stock 1⁄2 Pint
  White wine 1⁄4 Pint
  Salt To Taste
  Pepper To Taste
Directions

Cut the pork in 1 1/2 inch pieces.
Heat the oil in a pan, brown the pork quickly in the oil then remove from the pan.
Heat the butter in the pan, add the onions and cook slowly until soft.
Add the mushrooms.
Blend in the flour, stock and wine.
Bring to the boil then simmer for 2-3 minutes.
Replace the pork in the pan and season with salt and pepper.
Cover and simmer for 40-50 minutes, until the pork is tender.
