Fillets Of Sole With Tomatoes
|Sole fillets||3 Pound|
|Onion||1 Large, finely chopped|
|Watercress||1⁄2 Cup (8 tbs), chopped|
|Tomatoes||2 Large, peeled, seeded and chopped|
|Dry white wine||1 Cup (16 tbs)|
|Egg yolk||1 , beaten|
|Heavy cream||3⁄4 Cup (12 tbs)|
|Lemon juice||1 Tablespoon|
In a large glass baking dish add butter, onion, scallions, watercress, tomatoes, and tarragon.
Add the sole to the dish.
Add salt, pepper, and wine.
Cover and cook on highest setting for 12 minutes.
Let stand, covered, for 5 minutes.
Remove the fillets and keep them warm.
Continue to cook the sauce until the volume is reduced by one third.
Remove from microwave oven and rapidly stir in the egg yolk and the cream.
Taste and adjust seasoning as desired.
Add lemon juice.
Return the fillets to the cooking dish and spoon the sauce over them.
Broil in a conventional broiler on low heat for 5 minutes to brown.
