Fillets Of Sole With Vegetables
|Sole fillets||1 Pound|
|Heavy cream||3⁄4 Cup (12 tbs)|
|Stalk celery||1 , thinly sliced|
|Scallion||1 , thinly sliced|
|Carrots||2 , thinly sliced|
Melt the 1 tablespoon of butter in a me dium baking dish for 20 seconds on the high est setting.
Add vegetable slices and salt.
Cook for 2 minutes.
While stirring rapidly, add the cream.
Cook for 3 minutes.
Add in the sole and cook 3 minutes.
Remove fillets of sole and set on serving plate.
Cook sauce for 1 additional minute.
Take out of oven.
Pour sauce over slices of sole.
