Fillets Of Sole Gratin

Ingredients
  Sole fillets 6
  Breadcrumbs 8 Ounce (225 Gram)
  Cheddar cheese 3 Ounce, grated (75 Gram)
  Parsley 2 Tablespoon, finely chopped
  Butter 4 Ounce
  Lemon 6 , cut into quarters
  Salt To Taste
  Butter 1 Teaspoon (A Little Extra)
Directions

MAKING
1) Into a bowl, mix the breadcrumbs, grated cheese and parsley with 4 ounces of butter
2) Into a grill pan, line the base with foil and grease with butter
3) Place the fillet and season with salt and pepper
4) Cover the fillets with the breadcrumbs and pour some melted butter
5) Cook under a hot grill till the crumbs turn brown and the fish is cooked

SERVING
6) Serve with some garnished lemon and chopped parsley
