Three Herb Fillets

Ingredients
  Cod fillets 2 Pound
  Salt 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Tomato juice 1⁄2 Cup (8 tbs)
  Lemon juice 1 Tablespoon
  Parsley flakes 1 Teaspoon
  Chives 1 Teaspoon, snipped
  Basil leaves 1 Teaspoon
  Butter 1 Tablespoon
Directions

GETTING READY
1) Preheat the oven to 400°F.
2) Coat the bottom of a baking pan with butter.
3) Place the fish in the pan and dust it with seasoning on both the sides.

4) In a small bowl, mix together tomato juice, lemon juice, and herbs.
5) Gently stream the tomato juice mixture over the fish.
6) Bake the fish for 10 minutes or until tender.

SERVING
7) Serve the Three Herb Fillets hot with lemon wedge on side.
