Cordon Bleu Stacked Fillets
|Skinless flounder fillets/Sole fillets||28 Ounce (8 Pieces, 3 1/2 Ounce Each)|
|Boiled ham slices||4|
|Swiss cheese slices||2 , quartered|
|Green onion||1 , thinly sliced|
|Dry seasoned bread crumbs||1⁄4 Cup (4 tbs)|
|Grated parmesan cheese||1 Tablespoon|
|Snipped parsley||1 Tablespoon|
Place half of the fillets on a greased wire rack in a shallow baking pan.
Top each fillet with a piece of ham, cutting ham to fit fillet.
Place 2 pieces of cheese on ham, then sprinkle with green onion.
In a shallow dish combine egg and water.
In another shallow dish combine bread crumbs, Parmesan cheese, and parsley.
Dip 1 side of the remaining fillets into egg mixture, then dip into the crumb mixture.
With the crumb side up, form sandwiches by placing the crumb-coated fillets on top of the other fillets in the pan.
Sprinkle with any remaining crumb mixture.
Bake in a 450° oven about 10 minutes or till fish is done.
