Filet De Sole A L'Orly
|Tomatoes||3⁄4 Can (7.5 oz)|
|Garlic||2 Clove (10 gm), minced|
|Bay leaf||1 , minced|
|Thyme sprig||1 , minced|
Put on the tomatoes to boil, add 1 teaspoon butter and water.
Let boil 10 minutes, add finely minced garlic, bay leaf and thyme.
Boil until reduced slightly; then mash through sieve.
Heat 1 tablespoon butter in saucepan, add 1 tablespoon flour.
Stir until slightly browned; add tomato puree and season highly with salt, pepper, etc.
Stir until thickened.
Always garnish with parsley when using this sauce.
