Slender Fillets

Ingredients
  Skinless lean cod fillets/Catfish / pike / lingcod / perch / rockfish / sea bass fillets 1 1⁄2 Pound
  Thawed orange juice concentrate 2 Tablespoon
  Finely shredded orange peel 1 Tablespoon
  Vegetable oil 1 Tablespoon
  Ground nutmeg 1⁄8 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

Preheat oven to 375F (190C).
Rinse fish; pat dry with paper towels.
Cut rinsed fish into 4 to 6 servings.
Season with salt and pepper.
Lightly oil a baking pan large enough to hold fish in a single layer.
Arrange seasoned fish in oiled pan.
In a small bowl, combine orange-juice concentrate, orange peel, oil and nutmeg; spoon over seasoned fish.
Cover with foil.
Bake 6 to 10 minutes or until fish tests done
