|Thawed orange juice concentrate||2 Tablespoon|
|Finely shredded orange peel||1 Tablespoon|
|Vegetable oil||1 Tablespoon|
|Ground nutmeg||1⁄8 Teaspoon|
Preheat oven to 375F (190C).
Rinse fish; pat dry with paper towels.
Cut rinsed fish into 4 to 6 servings.
Season with salt and pepper.
Lightly oil a baking pan large enough to hold fish in a single layer.
Arrange seasoned fish in oiled pan.
In a small bowl, combine orange-juice concentrate, orange peel, oil and nutmeg; spoon over seasoned fish.
Cover with foil.
Bake 6 to 10 minutes or until fish tests done
