Fillet Of Sole With Shrimp
|Sole fillets||4 Large (Or 6 Small Ones, Fresh Or Frozen)|
|Dry white wine||1⁄4 Cup (4 tbs)|
|Hot water||2 1⁄2 Cup (40 tbs)|
|Lemon juice||2 Tablespoon|
|Minced green pepper||1 Tablespoon|
|Minced green onion||1 Tablespoon|
|Minced chervil/Dried chervil||2 Tablespoon|
|Shrimp||1 Cup (16 tbs) (Fresh Or Canned)|
|Buttered bread crumbs||1 Cup (16 tbs) (Soft Crumbs)|
Sprinkle the fillets with salt and pepper and marinate several hours in white wine.
Transfer to a frying pan, cover with the hot water and lemon juice, and simmer 10 minutes.
Lift fish to a buttered baking dish.
Cream the butter and flour together and add to the liquid remaining in pan.
Add all the remaining seasonings, shrimp, and salt to taste.
Cook, stirring, until thickened.
Strew half the crumbs over the fish, cover with the sauce, and sprinkle with the rest of crumbs.
Bake in a moderate oven (350°) about 15 minutes; then set under broiler, if needed, to brown top.
Garnish with lemon wedges and chervil or parsley
