Quick Herb Topped Fillets
|Olive oil||1⁄4 Cup (4 tbs) (50 Milliliters)|
|Sweet red pepper||To Taste, seeded and chopped|
|Green onions||4 , chopped|
|Dried oregano||1 Teaspoon (5 Milliliters)|
|Fresh parsley||1⁄4 Cup (4 tbs), chopped (50 Milliliters)|
|Capers||1 Tablespoon, drained (15 Milliliters)|
In medium skillet, heat oil over medium high heat.
Add red pepper, onions and oregano; cook over medium heat 2 to 3 minutes, stirring often, until pepper is just tender.
Stir in parsley, capers and pepper; set aside and keep warm.
Place fish fillets on oiled barbecue grill; grill over medium high heat 6 to 8 minutes, turning carefully once, until fish flakes easily with a fork.
