Quick Herb Topped Fillets

Ingredients
  Olive oil 1⁄4 Cup (4 tbs) (50 Milliliters)
  Sweet red pepper To Taste, seeded and chopped
  Green onions 4 , chopped
  Dried oregano 1 Teaspoon (5 Milliliters)
  Fresh parsley 1⁄4 Cup (4 tbs), chopped (50 Milliliters)
  Capers 1 Tablespoon, drained (15 Milliliters)
  Pepper 1⁄4 Teaspoon
  Fish fillets 4
Directions

In medium skillet, heat oil over medium high heat.
Add red pepper, onions and oregano; cook over medium heat 2 to 3 minutes, stirring often, until pepper is just tender.
Stir in parsley, capers and pepper; set aside and keep warm.
Place fish fillets on oiled barbecue grill; grill over medium high heat 6 to 8 minutes, turning carefully once, until fish flakes easily with a fork.
