Tangy Baked Fish Fillets
|Oil||1⁄4 Cup (4 tbs) (Crisco Puritan)|
|Onions||2 Medium, thinly sliced and separated into rings|
|Fish fillets||2 Pound, cut into serving size pieces (1/2 Inch Thick)|
|Black pepper||1⁄4 Teaspoon|
|Tomatoes||3 Medium, seeded and chopped|
|Lemons||2 , thinly sliced|
|White vinegar||1 Tablespoon|
Preheat oven to 325°F.
Heat Crisco® Puritan® Oil in deep skillet with ovenproof handle.
Cook and stir over moderate heat until tender.
Remove from heat.
Arrange fish over onions.
Sprinkle with salt and pepper.
Top with tomatoes and lemons.
Add bay leaf.
Sprinkle with vinegar and sugar.
Bake at 325°F for 45 minutes to 1 hour or until fish flakes easily with fork.
Remove and discard bay leaf.
