Crunchy Fried Fillets

Ingredients
  Frozen perch/Other fish fillets 1 Pound, thawed
  Salt 1⁄4 Teaspoon
  All purpose flour 3⁄4 Cup (12 tbs)
  Egg 1 , beaten
  Water 3 Tablespoon
  Saltine crackers 30 , crushed
  Vegetable oil 1 Cup (16 tbs)
Directions

Sprinkle fillets with salt, and dredge in flour.
Combine egg and water, mixing well.
Dip floured fillets in egg mixture, and coat with cracker crumbs.
Fry in hot oil (360°) over medium heat until browned.
Drain
