Paksiw Na Isda

Paksiw na Isda or Fish Cooked in Vinegar is a quick and easy seafood dish that is said to be one of the common everyday dishes prepared by Filipino families. Since the Philippines is composed of over 7,100 islands, fish is a staple particularly on the coastal areas.
Ingredients
  Mackerel fish 1 Pound, cleaned and scales removed
  Ginger 1 Medium, sliced and pounded
  Garlic 6 Clove (30 gm)
  Vinegar 1 Cup (16 tbs)
  Water 1 Cup (16 tbs)
  Onion 1 Medium, sliced
  Bitter gourd 1 Small, chopped
  Finger chili 3 Medium
  Salt 1 Teaspoon
  Whole peppercorn 2 Teaspoon
Directions

MAKING
1. Heat up a cooking pot pour vinegar and water.
2. Add salt and whole peppercorn. Bring to boil.
3. Arrange fish in the pan along with ginger, garlic, onion, bitter gourd, and finger chili.
4. Cover and simmer in low to medium heat for 12 to 15 minutes.

SERVING
5. Turn off the heat and transfer to a serving plate. Serve hot with steamed rice. Share and enjoy!

TIPS
You may substitute salt with 3/4 to 1 tablespoon fish sauce.
