Filipino Pork Menudo

Menudo is considered an ideal Filipino recipe served during special Filipino occasions or gatherings. This recipe is made using pork stewed in tomato puree, with vegetables and seasonings. This is not a typical menudo recipe and is a bit different from the traditional one because it doesn’t include pork liver. However all the ingredients complement each other and result in a delicious hearty stew.
Ingredients
  Boneless pork 300 Gram, thinly sliced
  Potatoes 200 Gram, diced
  Carrots 150 Gram, diced
  Green bell pepper 100 Gram, diced
  Garlic clove 5 Medium, chopped
  Onion 1 Medium, chopped
  Tomato puree 150 Gram
  Green peas 130 Gram
  Pineapple chunks 150 Gram
  Salt 1 Tablespoon (or to taste)
  Sugar 1 Tablespoon
  Soy sauce 1 Tablespoon
  Cracked black pepper 1⁄4 Teaspoon
  Cooking oil 1 Tablespoon
  Water 1⁄2 Cup (8 tbs)
Directions

MAKING
1. Heat the cooking oil in a cooking pan.
2. Saute garlic and onion.
3. Add the pork meat and salt. Stir for 1 minute then add the soy sauce. Stir. Wait until meat become tender.
4. Add the potatoes and carrots. Add the tomato puree. Stir. Add the water and sugar and mix it. Cover and let it boil. Simmer for 5 minutes.
5. Add the pineapple chunks and green bell pepper. Stir then add the green peas and the ground pepper. Stir. Simmer for 2 minutes.

SERVING
6. Serve with steamed rice.
