Medallions Of Monkfish With Fresh Figs

  Monkfish 2 Pound
  Lean smoked streaky bacon 3 Ounce, chopped into thin strips
  Shallots 2 , chopped
  Butter 2 Tablespoon
  Fresh figs 12
  Salt To Taste
  Pepper To Taste
  Sherry vinegar 3 Tablespoon

Rinse the monkfish under plenty of cold running water.
Pat dry on kitchen paper and remove the central cartilage.
Cut the flesh into 1/2 inch (1.25 cm) cubes and arrange the pieces side by side in a dish.
Cover and microwave on HIGH for 5 minutes.
Put the bacon and shallots in a dish.
Add the butter and cook, uncovered, in the microwave oven for 21/2 minutes on HIGH.
Rinse the figs and remove the stalks.
Cut into four without quite separating the quarters.
Put the figs in the dish with the bacon and shallots.
Add salt and pepper and the vinegar.
Microwave for 3 minutes on HIGH.
Drain the monkfish.
Arrange the figs around the edges of a serving platter.
Put the monkfish into the dish with the bacon, shallots and cooking liquid from the figs.
Season with salt and pepper and stir well.
Transfer the mixture to the center of the serving dish with the figs
