Smyrna Fig Dessert

Ingredients
  Unflavored gelatin 2 Tablespoon (2 Envelopes)
  Water 1⁄4 Cup (4 tbs)
  Sweet white wine 2 Cup (32 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Lemons juice 2 Tablespoon (Juice Of 2 Lemons)
  Brandy 1⁄4 Cup (4 tbs)
  Whipping cream 1 1⁄4 Cup (20 tbs)
  Ripe figs 1 Pound
  Chocolate scrolls 1 Tablespoon
Directions

MAKING
1. In a bowl, add gelatin, sprinkle water on it and leave till it turns spongy; place this bowl in a saucepan of simmering water and heat uuntil dissolved
2. In a saucepan, add wine and sugar along with brandy and lemon juice and let the sugar dissolve completely; turn the heat off
3. Strain the gelatin and allwo to cool
4. In a bowl, whip cream till it turns stiff; peel adn chop the figs
5. Add the cream to the wine mixture and reserve some for garnish; add in the chopped figs

SERVING
6. Spoon the fig dessert into individual dishes and chill till set
7. Pipe a rosette of cream on each, decorate with chocolate scrolls and serve
