Rum Butter Recipes
MAKING 1 Beat butter until soft and light. 2 Add soft brown sugar and beat lightly. 3 Beat in rum. 4 Spoon into a dish and chill. SERVING 5 Serve with Christmas pudding or hot mincepies. TIPS This soft creamy sauce can be alternately used to brandy butter.
MAKING 1 In a bowl add butter and cream well. 2 Slowly mix in the sugar with the lemon rind and juice. 3 Keep beating and add the rum little at a time to the desired flavor. 4 Plate out and chill. SERVING 5 Add over mince pies and serve.

1. Beat the butter to a very soft cream an electric mixer is excellent for this and gradually beat in the sifted icing sugar. 2. Add the rum from a spoon it is easier to control than from the bottle.
