Whipped Orange Butter
|Orange peel||1 Tablespoon, grated|
|Orange juice||2 Tablespoon|
Let butter stand at room temperature for 1 hour.
With electric mixer at lowest speed, mix till large chunks smooth out.
Gradually increase speed to high; whip till fluffy (8 to 10 minutes).
Stir in peel and juice.
Cover till ready to use. (If made ahead, chill, but remove from refrigerator an hour before using.)
Makes about 3/4 cup.
